Aquarium nitrate crisis? Help me!

My tank is 4 weeks in the "new tank" cycle. I had 2 guppies, that when I bought prenant. Now I have two guppies, 20 babies, three African dwarf frogs and two mystery snails. My nitrate, nitrite levels were GREAT Friday night. I did a water change 20% chlorine-free water, added the "tank established" dose as the enzyme stress that I am using API. Now, under Kit API test, my nitrite and nitrate from 5 to 160. What happened between Friday night and Saturday night after the water change? I "clean" gravel and kicked some things up – that would? I added the first reducing nitrate 2 hours – 5 times the dose as the lvls have not fallen. The fish are very well and just ate greedily your worms in the blood. Should I add more of the enzyme under stress? I'm very upset, my tank was perfect before water exchange. Oh – it's a tank of 29 gallons of fresh water. Any advice / help is appreciated.

Exit the addition of chemicals. They ruin testing and really do nothing for water. I would bet that the addition of screw Stesszyme further evidence that the nitrate jumped so much. **
